I have a 1995 Mits Diamante. What is the difference. in the power and economy mode?

In the power mode the car should feel more responsive when you step on the gas pedal..in the econo mode the car will not feel as peppy because it will be in the overdrive mode and not have as much power but will reward you with better fuel mileage.thus the economy mode..
